What is the egg?

the egg is a plant-based, whole egg powder made with vegan friendly protein.

What is the egg made of?

the egg is made of pea protein, protein-rich euglena flour, methylcellulose, gellan gum, black salt, organic onion powder, nutritional yeast, rosemary extract and mixed tocopherol blend (to maintain freshness).

Why do you call it “whole egg” powder?

We call it “whole egg” powder because it’s a plant-based egg powder, similar to traditional whole egg. 

What is euglena?

Euglena, pronounced ‘you-glee-nuh’, is a single celled micro-organism that evolved to become one of the first complex life forms on the planet. it is naturally rich in plant-based protein, beta-glucan, oil, vitamins, and minerals. Euglena has the unique ability to express properties of both plants and animals, and that shows in its nutritional profile.

How is euglena made?

Eunite euglena is grown in fermentation tanks at our plant in Peterborough, ON, Canada.

Is the egg vegan?

the egg is completely plant-based, the 6 grams of complete protein per serving comes from a pea and euglena protein blend.

Does it taste like chicken eggs?

The first version of the egg is similar to a chicken egg in taste and texture. with your feedback and help, the taste and texture of the egg will definitely become more chicken egg like in the near future!

Is the protein content of the egg similar to a chicken egg?

Each serving of the egg has 6 grams of complete protein in it, a chicken egg has 6.3 grams per 50 grams.

Does the egg have any cholesterol?

Unlike chicken eggs, the egg has zero cholesterol in it!

I have an egg/dairy allergy, can I eat this?

Absolutely! the egg is dairy-free and egg-free.

Is the egg only for vegans?

No! the egg is a healthy, sustainable, plant-based protein product for everyone! You can pair it with any ingredients you would regularly pair chicken eggs with. Check out our recipes for some great ideas put together by our innovation chef!

If I only use half of the mixed product can I keep the rest and use it later?

If you’ve made the egg mixture and don’t end up using all of it, make sure to keep any unused product refrigerated, and use within 3 days of mixing.

Does the egg only scramble or can you do other things with it?

the egg is great as a scramble, and it works in many different chicken egg based recipes. Breakfast sandwiches, pancakes, strata, chocolate cake, quiche have all been made with the egg. Check out our recipe section to see everything it can do! Our innovation chef is always looking to add to the egg’s repertoire, check back frequently for updates!

What is the best way to cook the egg?

For the tester bottle:
-Shake the bottle to loosen up the powder
-Add 2/3 cup (140mL) cold water and 1 tbsp (15mL) of oil to bottle
-Shake bottle vigorously until it forms a smooth liquid
-Lightly oil and heat a nonstick pan to medium-high/high heat
-Pour contents of the bottle into hot frying pan and let sit for 30-45 seconds or until bubbling has slowed and it is partially set
-With a spatula, push it from one side of the pan to the other to create a light fluffy texture
-Cook 4-6 minutes depending on preference
-Season to taste

For the pouch:
-Use the scoop provided to add two level scoops of the egg powder to a medium mixing bowl
-Add 2/3 cup (140mL) cold water and 1 tbsp (15mL) of oil to the bowl
-Whisk vigorously until it forms a smooth liquid
-Lightly oil and heat nonstick pan to medium-high/high heat
-Pour contents of bowl into hot frying pan and let sit for 30-45 seconds or until bubbling has slowed and it is partially set
-With a spatula, push it from one side of the pan to the other to create a light fluffy texture
-Cook 4-6 minutes depending on preference
-Season to taste

Can I use the egg in baked goods?

Our innovation chef has successfully used the egg in a chocolate cake application (see recipe). Tthere is the potential that it can replace the egg in other baked goods, we’re working to find out more! In the meantime, feel free to try it out and let us know how it goes!

Can I freeze the egg?

the egg is best when prepared and eaten right away, we do not recommend making extra and freezing it.

Is the egg non-GMO?

All of the ingredients in the egg are non-GMO, the egg itself is not non-GMO certified but will be in the future.

Is it organic?

the egg is not fully organic but it is 100% plant-based, soy & carrageenan-free.

How is the egg more sustainable?

the egg is more sustainable because the production of pea protein and euglena protein is more sustainable than the production of chicken eggs.

Where are you manufacturing it?

the egg is being manufactured at our co-packer Pack N’Fresh in Dallas, Texas.

Why does it cost more than eggs?

the egg currently costs more to produce the egg vs. regular eggs. As we grow and continue to build our customer base, the goal is to make the egg more affordable for everyone.

Allergens & Ingredients

Does your egg contain any allergens?

the egg recipe does not contain the 8 major food allergens.

We use third-party facilities to manufacture our product, so we cannot guarantee that our allergen-free products are made on designated allergen-free lines. However, in order to lower the risk of incidental contact with allergens from other products manufactured in the same facility, we require that our third-party manufacturers employ rigorous sanitation, inspection, and good manufacturing practices. We also include advisory allergen statements (e.g., “Manufactured in a facility that processes Tree Nuts, Wheat, Milk, Soy, and Peanuts but not on the same equipment”) for products that may have a heightened risk of allergen incidental contact.

Are your products Kosher?

The ingredients in the egg are kosher, the egg itself has not been kosher certified yet.

What is methylcellulose?

Food grade methylcellulose is derived from vegetable cellulose. It is used as a thickener and emulsifier in various food products. Like cellulose, it is not digestible, not toxic, and not an allergen. Also, the way it gels with hot temperatures is incredibly cool science. Our food scientists love it.

What is gellan gum?

Gellan gum is a food additive typically used to bind, stabilize, or texturize processed foods. It is particularly popular in vegan packaged foods because it’s a plant-based alternative to gelatin.

What is the rosemary extract and mixed tocopherol blend?

The rosemary extract and mixed tocopherol blend is a common antioxidant used in the food industry. It is a natural food additive that is used to keep the egg fresher for longer.

Where can you buy/find the egg?

If you’re a resident of the continental USA, you can purchase the egg on our website. We’re working towards making the egg available to online marketplaces and grocers in the continental USA as well. If you’re a grocer or online marketplace interested in picking up the egg, please contact us here. If you want to be able to purchase the egg in local stores, shout it from the social media rooftops and help us make people aware of how amazing the egg is!

Are the plastic containers you use BPA-free?

Our plastic containers are made out of PET plastic, they are BPA-free.

What’s the shelf life of your products?

180 days from the date of manufacture - please follow the best before date stamped on the product.

How far past the “best by” or “use by” date can I use your products?

We recommend following the best-before date on each individual package. The date printed on the package is valid for unopened products or opened products that have been stored appropriately. Please dispose of any product (opened or unopened) that is past the “best by” or “use by” date.
